Pasta with Chorizo, Tomatoes, Chilli and Mozzarella

Ingredients
 

  • 500 g Pasta
  • Salt
  • 3 Chorizo ​​sausage, thinly sliced
  • 500 g Cherry tomatoes, washed
  • A few squirts of honey
  • 1 Lemon, untreated, lemon peel finely chopped
  • 1 Medium chilli, chopped
  • 1 Garlic clove, thinly sliced
  • 2 tbsp Extra virgin olive oil
  • Sea salt
  • 1 bunch Basil, washed and leaves plucked
  • 2 Mozzarella
  • Manchego, finely grated

Instructions
 

  • Preheat the oven to 200 degrees. Place the tomatoes in a baking tray lined with baking paper together with the sausage slices. Put a few drops of honey over the sausage and roast for 15 minutes. In the meantime, cook the pasta in salted water according to the instructions on the packet.
  • Steam the lemon zest, chilli and garlic in the oil for 1-2 minutes. Add the pasta and mix. Spread the pasta along with the chorizo, tomatoes, basil leaves and half a mozzarella on each plate. Serve with the grated Manchego.
