Pasta with Chorizo, Tomatoes, Chilli and Mozzarella
The perfect pasta with chorizo, tomatoes, chilli and mozzarella recipe with a picture and simple step-by-step instructions.
- 500 g Pasta
- Salt
- 3 pcs Chorizo sausage, thinly sliced
- 500 g Cherry tomatoes, washed
- A few squirts of honey
- 1 pcs Lemon, untreated, lemon peel finely chopped
- 1 Medium-Sized chilli, chopped
- 1 pcs Garlic clove, thinly sliced
- 2 tbsp Extra virgin olive oil
- Sea-Salt
- 1 bunch Basil, washed and leaves plucked
- 2 pcs Mozzarella
- Manchego, finely grated
- Preheat the oven to 200 degrees. Place the tomatoes in a baking tray lined with baking paper together with the sausage slices. Put a few drops of honey over the sausage and roast for 15 minutes. In the meantime, cook the pasta in salted water according to the instructions on the packet.
- Steam the lemon zest, chilli and garlic in the oil for 1-2 minutes. Add the pasta and mix. Spread the pasta along with the chorizo, tomatoes, basil leaves and half a mozzarella on each plate. Serve with the grated Manchego.
