Ingredients for 4 servings:

  • 3 m.-sized eggs
  • 190 g butter or margarine
  • 130 g sugar
  • 280 g wheat flour type 405
  • 70 g potato starch
  • 8 g baking powder
  • 8 g vanilla sugar
  • 250 ml mineral water, more if needed

Working time approx. 40 minutes; Total time approx. 40 minutes

without milk, approx. 14 waffles

Beat the eggs and sugar until fluffy, add the room-temperature butter/margarine, and stir until creamy. Combine all dry ingredients in a large colander and sift. Carefully add the mineral water and sifted ingredients alternately to the creamy mixture, stirring constantly. Caution: You may find that the mineral water is sufficient, so use only 250 ml to begin with and thin out more as needed. Pour the batter into the preheated waffle iron using a ladle, smooth it out, and bake. Let the waffles cool on a wire rack; do not stack them! Otherwise, they will become soft! Serve with vanilla ice cream and hot fruit, or simply as a snack.
