Put the honey in a bowl and mix with the yeast until liquid. Then stir in the salt, melted butter, and egg. Slowly add the flour and water, stirring constantly. Let the dough rise for 1 hour. It should have doubled in size by now. The best way to make croissants is to cut triangles from the rolled-out dough and roll each one up starting from the wide side. Let rise again if desired, but this is not necessary. Then brush with egg yolk and sprinkle with seeds, if desired. Bake in a preheated oven at 200°C fan/convection oven for about 30 minutes. Let cool and enjoy.
