Ingredients for 2 servings:
- 125 g flour
- 2 apples
- 300 ml milk
- 100 g oat flakes, fine
- 75 g oat flakes, wholegrain
- 3 tbsp cane sugar
- 4 tbsp hazelnuts, ground
- 4 tbsp almonds, ground
- 1 tsp cinnamon
- 3 eggs

too thick for a pancake
Born out of necessity, as I didn’t have enough flour, but it turned out quite well. Mix the flour, eggs, hazelnuts, oats, cinnamon, and sugar with a hand mixer. Add the appropriate amount of milk to achieve the desired consistency (this recipe makes the batter quite thick). Peel and quarter the apples. Cut them crosswise into thin slices and fold them into the batter. Add more sugar and cinnamon if you like it really sweet. Now prepare several batches of Kaiserschmarrn in the pan (depending on the size of the pan). Fry for a while at a moderate temperature, then turn and break them up. Alternatively, you can sprinkle on some wholegrain oats before turning them over, which will give the whole thing a bit of a crispier finish. Note: The quantities, except for the flour and eggs, are estimates, as I was improvising.
