Crunchy wholemeal quark bread

Ingredients for 1 servings:

  • 500 g wholemeal flour
  • 500 g low-fat curd cheese
  • 2 eggs
  • 2 packets of baking powder
  • 1 tsp salt
  • 1 tsp sugar or honey
  • 100 g mixed seeds (e.g. flax seeds, sunflower seeds, chopped walnuts)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Without yeast

Combine all ingredients in a bowl and knead into a dough. If the dough is still sticky, add a little flour. Shape the dough into a loaf and place it in a greased loaf pan. Score the surface lengthwise several times. Bake the bread in a preheated oven at approximately 170 degrees Celsius (convection oven) for 45-60 minutes. The time depends on the oven. It’s best to use a wooden skewer to check if the bread is baked through. Let the bread cool slightly and then remove it from the pan. This bread tastes great with sweet and savory toppings. Tip: You can use any type of flour, or a mix (regular wheat flour works too). It also tastes good with cranberries for a sweeter version.
