Cucumber Raita

Ingredients for 4 servings:

  • 2 cucumbers
  • 2 tbsp salt
  • 1 m.-sized onion(s)
  • 500 ml kefir
  • salt and pepper
  • Cumin, (Cumin) n. B.
  • Lemon juice or lime juice if desired
  • 1 tsp sugar
  • chili powder

Working time approx. 15 minutes; Total time approx. 15 minutes

Indian kefir dish, cold sauce, dip

For the raita, peel and halve the cucumbers, remove the cores, grate them, and partially drain them with salt for at least 30 minutes. Squeeze or strain the cucumbers, add the finely diced onion, top up with kefir, and season to taste. Cumin and chili should be used. Sugar and lemon juice can be used to create a balance of acidity and sweetness. Variation: Instead of kefir, yogurt can be used. Substitute coriander powder or caraway for cumin.
