Cucumber salad with fresh mint

Ingredients for 2 servings:

  • 1 large cucumber(s) or snake cucumber
  • 5 sprigs of mint, fresh
  • 1 shot of oil
  • 1 lemon(s), juice
  • e.g. salt and pepper
  • 1 dashes liquid sweetener or a sweetener of your choice

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the cucumber and cut into any shape you like (I used fine sticks – julienne insert in a cucumber slicer). Wash the mint and cut into wafer-thin strips, leaving the tops of the stems on as well. If you don’t like mint or have no experience with it, please start with one stem at a time. Squeeze the lemon. Mix the first four ingredients in a bowl and season with salt and pepper. Sweeten with sweetener, if desired, or whatever you prefer. I ate the salad freshly dressed, so I can’t comment on how it will taste after hours. In any case, it will have absorbed a lot of liquid.
