Cucumber salad with honey curry dressing

Ingredients for 4 servings:

  • 2 tsp honey
  • 50 ml vegetable stock
  • 1 tsp curry powder
  • 2 tsp fresh dill, chopped
  • 2 tbsp Balsamic vinegar, white
  • 4 tbsp olive oil
  • Salt
  • 1 cucumber(s) (snake cucumber)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dissolve honey in warm vegetable broth, let cool, then stir in curry powder, dill, vinegar, salt, and olive oil. Peel the gherkin, slice it thinly, and fold it into the dressing.
