Cucumber salad with peppers and basil oil

Ingredients for 2 servings:

  • 1 cucumber(s)
  • ½ bell pepper(s), red
  • 1 small onion(s), red
  • 1 tsp, leveled salt
  • 1 tbsp fruit vinegar
  • 2 tbsp oil (basil oil)
  • 1 pinch of pepper
  • 1 tbsp honey
  • 1 pinch of herbal salt
  • 1 dashes lemon juice

Instructions

Working time approx. 12 minutes; Rest time approx. 15 minutes; Total time approx. 27 minutes

Wash and peel the cucumber, slice it into thin slices, toss with the salt, and let it sit for about 15 minutes. Wash and trim the bell peppers, and cut them into thin strips. Peel and dice the onion. For the salad dressing: In a small bowl, combine the vinegar, herb salt, pepper, lemon juice, honey, and basil oil; whisk to combine. Squeeze the cucumbers, place them in a salad bowl, add the bell peppers and onions, and pour the salad dressing over them.
