Cucumber salsa

Ingredients for 4 servings:

  • 1 thick cucumber(s)
  • 2 small onions, diced
  • 5 tbsp olive oil, for sautéing
  • 4 tbsp apricot jam
  • 1 small lemon(s), squeezed
  • Salt and pepper, from the mill
  • Chili, dried, from the mill

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Spicy, refreshing, goes well with grilled fish, meat and vegetables

Sauté the diced onions in olive oil until translucent. Then add the apricot jam and lemon juice. Season generously with salt, pepper, and chili, and let cool. Meanwhile, peel the cucumber and dice it into small cubes. Stir in the onion mix and let it all sit in the refrigerator for about 1 hour.
