Ingredients for 4 servings:
- 50 g margarine
- 100 g sugar
- 4 eggs, separated
- ½ kg quark (cottage cheese)
- 150 g semolina
- 1 tbsp vanilla sugar
- 1 tbsp baking powder
- 2 lemons, juice
- 50 g raisins
- n. B. Rum
- Salt
- Fat and breadcrumbs for the mold
- powdered sugar

Quark casserole, tastes best fresh!
In a large bowl, beat the room-temperature margarine with half the sugar until fluffy. Gradually add the egg yolks, one at a time, and continue beating until fluffy. Then gradually add the curd cheese, semolina, baking powder, vanilla sugar, lemon juice, raisins, and a good splash of rum. Beat the egg whites with a pinch of salt until stiff peaks form. Before the cream is completely stiff, add the remaining sugar. Now fold the beaten egg whites into the curd cheese mixture. Pour the batter into a greased and breadcrumb-coated dish. Bake in a preheated oven at 180°C for about 45 minutes. Sprinkle generously with powdered sugar before serving. Compote goes very well with this.
