Ingredients for 4 servings:
- 50 g raisins
- 3 eggs
- 200 ml milk
- 1 packet of vanilla sugar
- 100 g flour
- 250 g low-fat quark (cottage cheese)
- 4 tsp butter
- 3 tbsp sugar
- 1 tbsp lemon juice
- 100 g whipped cream
- Salt
- possibly mint and powdered sugar for decoration
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Soak the raisins in water. Separate 1 egg and set the yolk aside. Whisk together the egg whites, 2 eggs, and the milk. Add 1 pinch of salt, vanilla sugar, and flour, and mix everything into a smooth batter. Let it swell for about 10 minutes. Heat 4 teaspoons of butter one at a time in a small non-stick pan (approx. 24 cm) and use the batter to make 4 pancakes. Mix the quark with 2-3 tablespoons of sugar, the remaining egg yolk, and lemon juice. Drain the raisins well and fold in. Spread the pancakes with the quark cream, roll them up, halve them if necessary, and place them side by side in a small greased baking dish. Mix the cream with 1 tablespoon of sugar and pour over the pancakes. Bake in a preheated oven (175°C, fan oven 150°C, gas mark 2) for 10-12 minutes. Serve garnished with mint and powdered sugar.
