Curry cheese sandwich

Ingredients for 2 servings:

  • 8 tbsp low-fat curd cheese
  • ½ tsp curry powder
  • salt and pepper
  • 4 lettuce leaves
  • 4 slices of wholemeal toast
  • 2 kumquats
  • 2 onions, red
  • 4 slice(s) cheese (Emmental), thin

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the quark and curry. Season with salt and pepper. Halve the toast diagonally. Thinly slice the kumquat. Slice the onion into thin rings. Spread 1 tablespoon of curry quark on each of 4 toast halves. Top with lettuce. Distribute the onion, kumquat, and cheese on top. Place a dollop of 1 tablespoon of quark on each piece and top with the remaining toast halves.
