Curry goulash

Ingredients for 4 servings:

  • 500 g pork or turkey meat for goulash
  • 1 large can of tomatoes
  • 1 cup sour cream
  • 500 g onion(s)
  • 2 tbsp curry powder or more (to taste)
  • 375 ml vegetable broth
  • Paprika powder
  • salt and pepper
  • Sugar
  • cornstarch
  • oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with tomatoes and onions

Roughly chop the onions and chop the canned tomatoes slightly. Sear the meat in a little oil, add the onions and cook gently. Sprinkle with the curry powder and deglaze with 125 ml of stock. Cover and simmer over low heat for about 45 minutes. Then add the tomatoes with their juice and the remaining stock and season with paprika, pepper, salt, and sugar. Simmer for another 15-20 minutes. Thicken with a little cornstarch and stir in the sour cream. Finally, season again with curry, paprika, salt, and pepper. This goes very well with spaetzle.
