Cyberlady's Penne with Chicken and Peppers

Ingredients for 4 servings:

  • 500 g pasta, e.g. Rigatoni
  • 2 cans of tomatoes, chopped
  • 400 g chicken breast
  • 150 g red bell pepper(s)
  • 150 g yellow bell pepper(s)
  • 100 g onion(s), chopped
  • olive oil
  • salt and pepper
  • 8 cocktail tomatoes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the chicken breast into small cubes and sauté in olive oil. Finely chop the onions, dice the bell peppers, and sauté in olive oil. Add the diced tomatoes and season with salt and pepper. Add the diced chicken breast, halve the cherry tomatoes, and add them. Cook the penne until al dente, toss with the sauce, and serve immediately.
