Ingredients for 1 servings:
- 1 egg(s), size M, hard-boiled
- 1 ½ tbsp mayonnaise
- 1 tsp Dijon mustard
- 50 g crème fraîche
- 1 tsp curry powder
- Salt and pepper, freshly ground
- 1 pinch(s) of sugar
- ½ m.-sized apple
- 2 tbsp, heaped gherkins, finely diced
- 2 tbsp, heaped onion(s), finely diced
- 1 tbsp capers, finely chopped
- 1 tbsp, heaped chives

Finely mash the egg yolk with a fork. Mix with mayonnaise, crème fraîche, mustard, and curry powder, and season with salt, pepper, and sugar. Peel and core the apple, and cut into small cubes. Finely chop the egg white. Mix with the gherkins, onions, capers, and chives into the mayonnaise. Season to taste. Important: Let it marinate overnight in the refrigerator. Tip: Also goes well with herring or grilled steak.
