Ingredients for about 60 pieces
Beat the egg whites until light and fluffy, then gradually add the sugar mixed with a pinch of salt and the lemon juice while continuing to beat. Beat until the mixture forms a thick, foamy consistency. Chop 100g of the dates, the almonds, and arancini, mix with the orange zest and orange liqueur, and fold into the mixture. Using two teaspoons, place small heaps onto a baking sheet lined with baking paper and bake in an oven preheated to 160°C for about 15-20 minutes. Dip the bottoms of the cooled cookies into the melted chocolate coating or brush with it, and decorate the tops with the remaining dates, cut into thin strips.
