Date and blueberry muffins

Ingredients for 4 servings:

  • 60 g oat flakes
  • 75 g almonds, ground
  • 200 ml almond milk (almond drink), unsweetened
  • 3 m.-sized eggs
  • 2 tbsp honey
  • 60 g blueberries
  • 35 g dates, finely chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat the oven to 200°C (top/bottom heat). Mix the oats with the ground almonds in a bowl. Then add the almond milk, eggs, and honey. Divide the batter among 8 muffin cups. Top half of the cups with the chopped dates and the other half with the blueberries. Bake the muffins for about 15-20 minutes.
