Date and peanut bars without sugar

Ingredients for 1 servings:

  • 200 g dates
  • 100 g oat flakes
  • 70 g peanuts
  • 70 g peanut butter
  • 20 g puffed quinoa or chia seeds
  • 20 g sweetener (Palatinose)
  • 1 banana(s), ripe

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 52 minutes

Soak the dates in water for 10 minutes. Preheat the oven to 200°C (top/bottom heat). Puree the soaked dates and banana. Grind the oats and peanuts in a blender. Combine all ingredients and let the dough rest for a short time. Form approximately 10-15 small bars and place them on a baking sheet lined with baking paper. Bake for approximately 10 minutes until golden brown. I wrap the bars individually in plastic wrap or wax paper and then freeze them. Simply take the desired amount out of the freezer before a bike ride, etc., and enjoy fresh.
