Ingredients for 1 servings:

  • 7 g chia seeds
  • 70 g water, warm
  • 5 g coconut flour
  • 75 g flaxseed meal
  • 1 tsp, saturates inulin
  • 1 pinch of salt
  • 1 m.-sized avocado(s), ripe
  • 3 tsp cocoa powder, unsweetened
  • 1 tsp maple syrup
  • 1 tbsp coconut oil
  • 1 dashes lime juice
  • Cinnamon powder
  • vanilla powder

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Mix the chia seeds with the water and let it sit for 15 minutes. This will form a viscous mixture. Mix the coconut flour, flaxseed, inulin (optional), and salt together and add to the chia pudding. Let it sit for 5 minutes. In the meantime, preheat the oven to 200°C. Moisten your hands with water and form the dough into 12 small balls. Press or roll the balls out onto a sheet of baking paper to form small, flat circles. I used a large-bottomed glass. Moisten the bottom occasionally to prevent the dough from sticking. Press flat onto the baking paper. Bake for about 10 minutes. The edges should be lightly browned. For the chocolate spread, halve the avocado, remove the pit, scoop out the skin, and blend. Add the cocoa powder to your desired intensity and season with a little maple syrup and lime juice. Briefly melt the coconut oil in the microwave and add it. Mix until smooth and refrigerate. Remove the sandwiches from the oven and let them cool. Spread half of the sandwiches with the chocolate cream and place a second sandwich on top. Store in the refrigerator so the avocado cream sets nicely. The sandwiches are great to take with you and your fingers stay clean. Tip: Inulin is a fiber that promotes the absorption of magnesium and calcium. If you want to increase the fiber content, you can add a pinch of inulin. Omitting it will not affect the baking properties or taste. One sandwich contains 146 kcal: 3.3 g carbohydrates, 0.2 g sugar, 9.8 g fat, 4.2 g protein, and 8.6 g fiber. An ideal snack when you’re craving some chocolate.
