Ingredients for 1 servings:

  • 100 g vanilla sugar, homemade
  • 100 g sugar
  • 2 tbsp syrup (glucose)
  • 80 ml water
  • 1 sachet of gelatin, ground
  • 60 ml water
  • Cornstarch and powdered sugar mixed 1:1

Marshmallows

Allow the gelatin to swell in a large bowl with 60 ml of water. Combine both types of sugar, the glucose syrup, and the 80 ml of water in a saucepan and bring to a boil briefly until the sugar has dissolved. Slowly pour the hot syrup into the gelatin, stirring constantly. This works best in a food processor on low speed. Once the syrup is completely absorbed into the gelatin, run the processor on high speed. After about 15 minutes (depending on the machine), a thick, foamy mass will form. In the meantime, line a baking sheet with baking paper and dust with the starch and powdered sugar mixture. Spread the mixture on the baking sheet and dust with the starch mixture. Let it dry for 12 hours. Then cut into small pieces and dust the cut edges with the starch mixture to prevent sticking. My family loved it; the mouse bacon was much tastier than store-bought. Tip: You can make your own glucose syrup. To do this, dissolve 64 g of glucose in 36 ml of hot water and bring to a boil. If desired, you can also add a few drops of food coloring while whisking. Instead of gelatin, you can also use a packet of jelly for a variety of flavors. Instead of water, simply use homemade fruit syrup, orange juice, or freshly squeezed lemon juice. For a child’s birthday party, you can also make the mouse bacon a few days in advance. Just make sure it’s tightly sealed so it doesn’t dry out.
