Take the quark and butter out of the fridge in good time; both should be at room temperature. Cream the butter and quark until creamy. Gradually add the flour and knead into a smooth dough. Leave to rest in the fridge for about an hour. Put the sugar on a plate. Roll out the dough on a lightly floured surface until about 4 mm thick and cut out 7-8 cm cookies. Roll the cookies in the brown sugar and fold in half, fold again and press the tops into the sugar. Place on a baking tray lined with baking paper. Bake in an oven preheated to 180 °C (top/bottom heat) for about 20 minutes on the middle rack.
