Dessert: Alma Szemét – Apple Pancake

- 2 piece Tart apples
- 2 piece Eggs separated
- 100 g Flour
- 10 g Sugar
- 1 pinch Salt
- 100 ml Milk
- 2 tablespoon Raisins
- 1 tablespoon Clarified butter
- First place the two apples in a baking dish and cook at 175 degrees in the oven until the peel bursts and the flesh tries to escape.
- Remove the peel as far as possible and put the apples through the potato press.
- Beat the egg whites into snow. Make a pancake batter using egg yolk, flour, sugar, salt and milk. Let rest for 10 minutes. Carefully fold the squeezed apples and the egg buns into the batter. You should start working with the egg whites, because this makes the junk wonderfully fluffy.
- Heat a tablespoon of clarified butter in a pan. Pour in the batter, turn down the temperature, put the lid on the pan and let the whole thing set.
- Possibly spread a few raisins on the dough, turn it over as soon as it has got color on the underside, sprinkle with sugar and tear it up. Turn the pieces again, sprinkle with sugar again and then bake until crispy.
- Arrange the apple pancakes on preheated plates and sprinkle with powdered sugar. I topped it with some caramel sauce that was left over from the last dessert.
