Dessert: Buttermilk Moussee

- 500 ml Buttermilk
- 4 tbsp Sugar
- 5 sheet Gelatin
- 1 Lemon fresh
- 200 ml Cream 30% fat
- 1 Vanilla sugar
- Soak the gelatine in cold water. Warm the buttermilk a little, add the sugar and dissolve the gelatine in it. Rub the zest of the lemon and squeeze the juice from half a lemon and add everything to the buttermilk.
- Let everything gel, whip the cream with vanilla sugar until it is half stiff, then fold everything into the buttermilk and let it set.
