Dessert: Cream Pudding with Plum Groats

The perfect dessert: cream pudding with plum groats recipe with a picture and simple step-by-step instructions.

  • 400 ml Milk
  • 50 g Sugar
  • 1 piece Organic egg yolks
  • 1 pinch Salt
  • 1 piece Vanilla pod scraped out
  • 30 g Food starch
  • 100 ml Cream 30% fat
  • 250 g Plums without seeds
  • 2 tablespoon Sugar
  • 2 sheet Gelatin white
  • Almond brittle and mint leaves
  1. Stir the cornstarch in approx. 50 ml milk until smooth. Bring the rest of the milk to the boil along with the vanilla pulp, sugar and salt.
  2. Stir in the emulsified cornstarch, bring to the boil and cool the pudding.
  3. Now stir the egg yolks and whipped cream into the cold pudding.
  4. Stone the plums, cut eighths, sprinkle with sugar and heat. Cook for about 5 minutes until soft, then puree.
  5. Let the gelatine soak in a little cold water, squeeze it out and dissolve it in the hot plum sauce.
  6. First put a layer of vanilla pudding in dessert glasses, then spread the plum jam on top, let it set in the refrigerator and top with a layer of pudding.
  7. Enjoy the dessert garnished with almond brittle and a mint leaf.
  8. Unfortunately only one photo this time, I just forgot it. 😉
