Dessert: Yogurt Bomb on Fruit Mirror

Ingredients
 

  • 500 g Yogurt
  • 500 ml Cream
  • 80 g Sugar
  • 2 packet Vanilla sugar
  • Zest of half a lemon

For the fruit mirror

  • 500 g Mixed berries, frozen
  • 500 g Blueberries and strawberries
  • 50 g Sugar

For the chocolate code

  • 150 g Dark couverture

Instructions
 

  • The yogurt bomb must be prepared the day before. Whip the cream, but it doesn't have to be firm. Stir in yogurt, sugar (if you want more), vanilla sugar and lemon zest. Pour everything into a sieve covered with a wipe and allow to drain overnight. This is how the yogurt mixture becomes firm.
  • Melt the couverture and spray it onto a baking tray lined with baking paper. Let cool down overnight. Thaw the berries.
  • The next day, clean the fresh fruits and quarter the strawberries if necessary. Puree the thawed fruit with the sugar. Overturn the yogurt bomb on a large platter and pour the fruit puree all around. Garnish with some of the fresh berries.
  • Cut the chocolate lattice into squares and place them decoratively. Arrange a dessert plate for each with a little fruit mirror, fresh fruit and a chocolate lattice. The yogurt bomb is then distributed around the table.
  • It was seeeeeehhhhhhhhhhr delicious and very fluffy.
