Ingredients for 5 servings:

  • 10 eggs, hard-boiled
  • 1 small can/mandarin orange(s)
  • 1 tbsp mustard, medium hot
  • 5 tbsp Miracle Whip
  • 1 pinch(s) of sugar
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Peel the 10 hard-boiled and cooled eggs and separate the yolks from the whites. Combine the egg yolks with the mustard, Miracle Whip, salt, pepper, and a pinch of sugar; mix until smooth. Using an egg slicer, dice the egg whites once lengthwise and once crosswise. Drain the mandarins, reserving the juice. Halve each mandarin orange. Carefully combine the egg yolk mixture, the diced egg whites, and the mandarin oranges. Add a dash of mandarin orange juice, stir again, and season to taste. The egg salad should sit in the refrigerator for at least two hours before serving.
