Ingredients for 8 servings:
- 250 g vegetable margarine
- 8 eggs
- 500 g quark 40%
- 250 ml milk
- 300 g flour
- 1 pinch of salt
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes
Heat the margarine in a saucepan until liquid. Separate the eggs. In a bowl, beat the egg whites with a pinch of salt until stiff. In another bowl, combine the egg yolks and quark. Then add the melted margarine and mix everything vigorously. Next, add the milk and flour and mix again (the consistency should now be that of porridge). Once everything is well blended, very carefully (!) fold in the beaten egg whites. Place the mixture in a boil-proof cloth (I used an old white cotton cloth measuring 80 x 80 cm) and tie a knot directly over the top. Hang the bag in a large pot of boiling salted water (about 4 teaspoons of salt) and simmer for a good 2 hours. It is important that the water boils continuously and that the bag does not touch the bottom of the pot. We always eat this with bacon and strawberry sauce.
