Ingredients for 4 servings:

  • 375 g flour
  • 3 eggs
  • 250 g quark
  • ½ cup mineral water
  • Salt or broth (instant)
  • 1 pinch of baking powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Saarland

Mix the flour with the baking powder and place it in a bowl. Stir in the eggs and quark. Add a good splash of sparkling water until the batter falls off the spoon. Meanwhile, bring a large pot of water and instant broth or salt to a boil. Scoop out the batter with a spoon and add it to the hot water. Let it sit for about 10 minutes. When the Knepp pop up, they’re ready. Mix the prepared flour Knepp with boiled potatoes and pour over the buttered bread cubes. Serve with apple compote or canned fruit. For a spicy twist, add beetroot or lettuce.
