Ingredients for 4 servings:
- 500 g turkey breast
- 300 g beans, green
- 300 g mushrooms, white or brown
- 8 small tomatoes
- Salt
- pepper
- chili flakes
- savory
- 2 tbsp cream
- Oil or clarified butter, for frying
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Wash and trim the green beans, then blanch them in boiling salted water with some savory for about 8 minutes. Rinse with cold water and let them cool in a sieve. Slice the mushrooms and quarter the tomatoes. Cut the turkey breast into slightly larger strips and fry them, season with salt, pepper, and a few chili flakes. Remove from the pan and set aside. In the same pan, fry the mushrooms, add the blanched beans and tomato quarters, add 2-3 tablespoons of water, and add the turkey meat back in. Simmer briefly and season again with 2 tablespoons of cream, perhaps with some savory and spices. Serve with rice, pasta, or hearty farmhouse bread.
