Nectarine and plum jam

Ingredients for 1 servings:

  • 1 kg nectarine(s), white
  • 1 kg plum(s)
  • 1 kg gelling sugar, 2:1
  • 5 cl rum, brown
  • 1 tsp cinnamon
  • 1 tsp vanilla, ground
  • ½ tsp cardamom, ground, amount to taste

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 35 minutes

with spices and rum

Pit and finely chop the nectarines and plums, combine them with the gelling sugar in a saucepan, and let stand for at least 3-5 hours. Then gently heat the pan and add the spices, stirring well. When the fruit mixture is bubbling, simmer for 5 minutes and puree about half of it with a hand blender. There should still be some chunks in the jam, so stir in the rum. Bring back to a boil, then pour into sterilized jars and screw on the lids. I made 6 medium-sized jars.
