Ingredients for 6 servings:
- 1.3 kg potatoes, peeled and diced
- 4 egg yolks
- 40 ml cream
- 25 g Parmesan
- 1 tsp mustard
- Pepper, from the mill
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Preheat oven to 210°C fan/convection oven and grease a baking sheet or line it with baking paper. Boil the potatoes until tender, drain, and puree. Whisk together the egg yolk, cream, cheese, mustard, and pepper. Mix well with the puree. Transfer the mixture to a piping bag and place dots of the mixture onto the baking sheet using a star nozzle. Bake for 20 minutes until golden brown.
