Easter Bunny
The perfect easter bunny recipe with a picture and simple step-by-step instructions.
Biscuit Dough
- 4 piece Eggs fresh
- 160 g Finest baking sugar
- 2 packet Vanilla sugar
- 100 Milliliters Coconut liqueur
- 180 g Flour, sifted
- 2 Teaspoon (level) Tartar baking powder
INGREDIENTS, CREAM FILLING
- 500 g Curd
- 500 g Yogurt
- 500 Milliliters Whipped cream
- 100 g Extra fine sugar
- 4 packet Vanilla sugar
- 2 bag Instant gelatin
OPTIONAL
- 200 g Fresh strawberries
DECORATION
- 200 g Coconut flakes
- 50 g Jelly beans
- 200 g Colorful meringue eggs
- 2 Fondant green or white, possibly green food coloring
BISCUIT DOUGH
- Mix flour with baking powder. Separate eggs, beat egg whites into snow, whip egg yolks with sugar and vanilla sugar until the mixture is very creamy, then gradually stir in the coconut liqueur. Now fold in the egg whites and carefully fold in the flour-baking powder mixture, put the dough in a springform pan lined with baking paper and bake for 35-40 minutes at 160 degrees lower and upper heat. When the biscuit is cooked through, turn off the oven and let it cool for 10-15 minutes with the oven door open, then turn it out onto a wire rack and let it cool down completely before further processing.
CREAM FILLING
- Put the pots, yoghurt and cream in a high bowl, stir gently with the mixer on low setting, add the instant gelatine and whisk until creamy for 2-3 minutes. Put the cream in a cool place.
CAKE SHAPES
- Divide the biscuit in the middle, place both parts next to each other (see photo), cut out a triangle at the curve in the front third, this will serve as a head and flower. If you want strawberries in the filling, wash the berries and cut them in half, sprinkle with a little vanilla sugar and set aside. Spread cream on both halves of the cake, if necessary place the strawberries on one of the cake sides and cover with the other side. Place the cake carefully. Cut off a small part from the triangle for the flower, place the larger part in front as a head and the small part at the end as a flower. Now apply the cream, a little more on the side so that it doesn’t look so choppy. Then sprinkle thickly with the coconut flakes, now you can model the cake a little more.
DECORATE
- Knead the green fondant, or white fondant with green food coloring, until soft. Put in a spaetzel press or something similar and press out short pieces and cut over a large plate, see photo, serves as grass. Let the fondant dry, place the rabbit body in the middle of the plate and put it in a cool place.
FOR THE SPOON
- For the rabbit ears, one sheet of white and one sheet of pink craft paper. Draw two bigger ears on the white paper, 2 smaller ones on the pink paper. Cut out all parts, glue the pink parts to the white ones.
COMPLETION
- Take the cake out of the fridge with small jelly beans, put on your nose and eyes, put the spoon behind your head and use a food coloring pen to indicate your mouth. Spread the meringue eggs and the remaining jelly beans on the “grass”. FINISHED.
