Ingredients for 4 servings:

  • 60 g oat flakes, fine
  • 130 g flour
  • 375 ml milk
  • 4 egg yolks
  • 4 egg whites
  • 1 pinch of baking powder
  • Salt
  • Clarified butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Beat the egg whites with a pinch of salt until stiff and set aside. Combine the flour, baking powder, and oats. Stir in the egg yolks, then gradually add the milk and mix thoroughly. Finally, fold in the stiffly beaten egg whites. Heat clarified butter in a pan and pour in some of the mixture. Fry on one side until golden brown, then turn over and tear into small pieces with a spatula or two forks, continuing to turn and fry until golden brown. Repeat with the remaining batter.
