Ingredients for 1 servings:
- 7 egg yolks
- 200 g powdered sugar
- 1 packet of vanilla sugar
- 510 g coffee cream, unsweetened, 4% fat (the amount corresponds to 1.5 tetra packs)
- ¼ mango(s) or a peeled kiwi (optional)
- 310 ml alcohol (Prima Spirit 69.9% Vol.)

Place the first five ingredients in a blender and blend thoroughly (about 40 seconds), then pour the liquid into a saucepan and heat. Caution! You’ll need a thermometer, as the liquid must not exceed 70°C. Be sure to stir with a whisk while heating. A deposit will inevitably form at the bottom of the pan, so be careful not to scrape the bottom of the pan too vigorously. This could impair the flavor. Once it reaches 70°C, return everything to the blender, add the Prima Sprit, and blend again, again for 40 seconds. Caution! Pressure may build up in the container. My blender has a hole in the lid through which you can insert a pestle. I use this hole to vent the excess pressure during the blending process so that the excess pressure can escape. Now pour the eggnog into hot, rinsed bottles and seal them. This will yield about one liter of eggnog. I love this eggnog. It easily competes with the expensive brands. The nice thing about it is that you can buy the eggs from a farmer you trust.
