Eggnog loaf cake

Ingredients for 1 servings:

  • 4 eggs
  • 300 g wheat flour
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 tsp baking powder
  • 200 ml oil
  • 150 ml egg liqueur

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 25 minutes

Preheat oven to 175°C (top/bottom heat). Line a 2-liter, 30-cm-long loaf pan with parchment paper and lightly grease. Beat eggs, sugar, vanilla sugar, and salt until creamy, then slowly add the oil. Mix the flour and baking powder and stir in portions. Add the eggnog, stirring constantly. Pour the batter into the loaf pan. Cut a slit lengthwise in the center of the dough with a knife. Bake for 75 minutes, covering with aluminum foil after about 50 minutes if necessary. Remove the eggnog loaf cake from the oven, place it on a wire rack, and let it cool slightly. Then carefully turn it out of the pan and peel off the parchment paper. Glaze it, if desired.
