Eggplant and salmon rolls with goat cheese

Ingredients for 2 servings:

  • 1 eggplant(s)
  • 100 g smoked salmon
  • 50 g goat cheese
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cut the eggplant lengthwise into slices about 5 mm thick. Salt the slices and place them on kitchen paper to drain some of the liquid. Brown the slices evenly in a pan with a little olive oil. Top the slices first with a slice of smoked salmon, then with a piece of goat cheese (feta cheese also tastes good), and season to taste. Roll up the eggplant slices and secure with a few toothpicks. If desired, briefly brown the rolls again or place them in a hot oven (approx. 180°C) to allow the cheese to melt slightly.
