Eggplant gnocchi pan

Ingredients for 4 servings:

  • 1 eggplant(s)
  • 1 kg gnocchi
  • 1 can of tomatoes, diced
  • 4 small sausages, raw
  • 1 onion(s)
  • 3 cloves garlic
  • 1 small bunch of Mediterranean herbs
  • salt and pepper
  • olive oil

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Dice the eggplant, season with salt, and let stand for 20 minutes. Dice the onion. Finely chop the garlic. Slice the sausage. Now fry the onions in a pan with a little olive oil until translucent. Brown the sausage, then fry the eggplant and garlic. Meanwhile, cook the gnocchi according to the package instructions. Deglaze the pan with the tomatoes and then add the gnocchi. Season to taste with salt, pepper, and Mediterranean herbs.
