Eggs: Sole Di Uova

The perfect eggs: sole di uova recipe with a picture and simple step-by-step instructions.

  • 6 Discs Bacon
  • 1 piece Onion small
  • 2 piece Garlic cloves chopped
  • 3 piece Cocktail tomatoes
  • 1 pinch Black pepper from the mill
  • 1 pinch Sweet paprika
  • 1 Knife point Red chilli flakes
  • 3 tablespoon Cream
  • 3 piece Eggs
  • 2 tablespoon Freshly grated Parmesan
  1. Place three slices of bacon in a star shape in a tartlet mold.
  2. Peel the onion and garlic and dice very finely. Halve the tomatoes, remove the roots, pulp out the seeds and cut into small pieces.
  3. In a bowl, mix the diced tomatoes, onion and garlic with the cream, pepper, chilli flakes and paprika powder. Beat the eggs and mix in gently. There should be NO homogeneous mass.
  4. Spread the egg mixture on the cake molds with the ham and let it set at 175 degrees for about 15 minutes.
  5. Sprinkle a tablespoon of Parmesan cheese on each sun and bake under the grill.
  6. Carefully remove the suns from the molds and arrange with the desired side dish – here hash browns from the pan – on a preheated plate, garnish with tomato and spring onion rings and serve.
