Eggs with mustard, parsley and capers

Ingredients for 4 servings:

  • 4 eggs, hard-boiled
  • 2 tbsp mustard, medium hot
  • 2 tbsp mayonnaise
  • 2 tbsp parsley, finely chopped
  • salt and pepper
  • some milk, if needed
  • 1 tbsp capers

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Halve the hard-boiled eggs lengthwise, remove the yolks, strain them through a fine sieve, and mix well with mustard, mayonnaise, salt, pepper, and parsley. If the mixture is too dry, add a little milk or mayonnaise until smooth. Spoon everything into the egg halves and garnish with the capers.
