Clean the red cabbage, quarter it, remove the stalk. Slice very finely or cut into fine strips.
Put the cabbage in a bowl, lightly salt and mash until tender or knead with your hands.
Peel the onion and cut into fine cubes or strips. Peel the apple, remove the core and cut into fine strips.
Add the onion and apple to the cabbage. Add vinegar, sugar, a pinch of salt and oil, mix everything well. Then the herb has to steep for 20-30 minutes.
The salad tastes good with meat, game, poultry, but also with fish.
