Elderberry – a treasure of nature

Ingredients for 4 servings:

  • 1 liter of juice (elderberry juice)
  • 1 liter of milk
  • 1 stalk(s) cinnamon
  • 1 anise (star anise)
  • 2 carnations
  • 1 pinch of salt
  • Sugar to taste
  • 1 packet of pudding powder (vanilla or cream)
  • possibly rusks

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Elderberry soup

I make the elderberry juice using a juicer. You can also boil the berries and press them through a sieve. Bring the juice to a boil with the milk (some of which you reserved beforehand for the custard powder), the cinnamon stick, the star anise, the cloves, salt, and sugar. Stir in the custard powder and bring to a boil again. Then we crumble the rusks and place them in a bowl. Pour the elderberry soup over the juice. It’s good for colds, because you start sweating after eating!
