Elderberry jam with apple and plum

Ingredients for 1 servings:

  • 1.6 kg elderberries, stripped
  • 1 apple
  • 4 large plums
  • 1 lemon(s)
  • ½ tsp cinnamon
  • 1 bag of vanilla sugar
  • 1 ½ bags of gelling sugar, 1:3

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 43 minutes

Briefly bring the washed berries to a boil in a saucepan, let them steep, and then strain through a sieve. Peel and core the apple and pit the plums. Finely chop both and add them to the elderberry puree along with the spices, lemon juice and grated zest, and the gelling sugar. If desired, chop the plum and apple pieces with a hand blender. Bring everything to a boil, simmer for 3 minutes, and pour into the prepared screw-top jars while still hot. Turn the jars upside down for 5 minutes.
