Elderberry liqueur

Ingredients for 5 servings:

  • 1 ½ liters elderberries (leftovers, pomace from steam juicing)
  • 0.7 liters of vodka
  • 100 g sugar

Instructions

Working time approx. 10 minutes; Rest period approx. 42 days; Total time approx. 42 days 10 minutes

Use up leftover elderberry juice. Yields about 1.2 liters of elderberry liqueur.

You’ll need a large, tightly sealed 2-liter container (I use a large mason jar). Fill the jar three-quarters full with the elderberry pulp, add the sugar, and top up with the vodka. Close the jar tightly, place it in a warm place, and let it steep for six weeks. Shake the jar occasionally. After six weeks, strain the mixture through a sieve, squeezing out the elderberry pulp a little. Then strain again through a cloth or a paper coffee or tea filter and bottle.
