Ingredients for 1 servings:

  • 1 tbsp flour (heaped)
  • 1 egg(s)
  • 50 ml milk (approx.)
  • 1 pinch of salt
  • Butter, for the pan
  • 8 stalks of elderflower umbels
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Elderberry cakes

Make a pancake batter from flour, milk, egg, and salt; it should be rather runny than too thick. Cut the elderflower heads off the elderberry bush (leaving a piece of the stem attached for easy handling), clean them, and place them upside down in the batter so that the white flowers are completely covered. Fry them, stem-up, in a pan with plenty of butter. Sprinkle sugar generously on a plate and place the pancakes on top. Best eaten while still hot.
