Elderberry syrup for figure-conscious people

Ingredients for 1 servings:

  • 1 kg elderberries
  • 2 lemons, untreated
  • 1 tbsp ginger, pickled
  • 3 liters of water
  • 1 large orange(s), sweet, untreated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

First, strip the elderberries from the clusters into a sieve. Briefly rinse with water to remove any small creatures and dirt. Then place in a saucepan with about 3 liters of water and bring to a boil. Briefly wash the lemons, slice them, and add them to the berries. Peel the orange (I then put it in the turbo blender with a little water). Pour the orange juice into the pan. Cook everything until about 1/3 has evaporated. Just before the end, add the ginger. Simmer for 4-5 minutes. Always make sure that nothing boils over. Pour the reduced juice through a fine sieve into a second saucepan and bottle while still hot. It tastes a little more tart because no sugar is used. My tip: If you want to make jelly, simply add the gelling sugar according to the package instructions. For 2 liters of juice, use about 1 kg of gelling sugar 2:1.
