Ingredients for 1 servings:

  • 25 elderflower heads
  • 1 liter apple juice
  • n. B. Gelling sugar 3:1 (follow package instructions and adjust quantity accordingly)

Heavenly fruity!

Carefully wash the elderflower blossoms (from a low-pollution area!) and gently shake off any water. Then pour over 1 liter of apple juice. Let the mixture steep, covered, for 24 hours. Strain and measure or weigh the amount of juice (some of the apple juice will remain on the blossoms and be lost). Measure the amount of gelling sugar according to the amount of liquid and add it to the juice. If you prefer a sweeter taste, use either a 1:1 or 2:1 gelling sugar. Follow the instructions on the gelling sugar package. Then pour into prepared jam jars, seal, and turn upside down for 5 minutes.
