Endive salad with apple

Ingredients for 2 servings:

  • 1 head of lettuce (endive)
  • 1 apple
  • 3 tbsp balsamic vinegar, white
  • 5 tbsp olive oil
  • 1 tbsp pumpkin seed oil
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp mustard, medium hot
  • 1 half onion(s)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

In a salad bowl, combine salt, pepper, sugar, and mustard with the vinegar. Whisk in the olive oil and stir in the finely chopped onions. Let the dressing stand for a while. Then, thinly slice the endive and add to the dressing. Quarter the apple, then slice it and add it. Mix well and don’t let it stand long before serving. Finally, drizzle with the pumpkin seed oil.
