Endive salad with yoghurt à la Gabi

Ingredients for 4 servings:

  • 1 head of endive lettuce
  • ½ cup yogurt
  • lemon juice
  • Salt
  • Sugar
  • Herbs, mixed

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove any wilted and dark leaves from the endive, wash thoroughly, and cut into fine strips. Mix well with yogurt, season with lemon juice, a pinch of sugar, salt, and plenty of herbs. Just before serving, gently toss the salad with the dressing.
