Ingredients for 6 servings:
- 6 slices of bacon
- 3 eggs
- 6 cocktail tomatoes
- 6 tsp baked beans
- 6 mushrooms
- 3 slices of toast
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
English breakfast with bacon, mushrooms, beans and eggs from the muffin tin
Cut out the toast slices into circles to form the base of the muffin tin. Arrange the bacon strips in a ring around the tin, raising the sides. Quarter the cherry tomatoes, season generously with salt and pepper, and arrange them in the tin so that they support the bacon strips. Add a teaspoon of baked beans to each tin and place one or two uncooked mushrooms on top. Just before placing the tin in the oven, break the three beaten eggs evenly into the six tins. Place in a preheated oven at 200°C (fan oven) for 15-20 minutes. Serve with sausages and traditional English orange marmalade toast.
